Yummy Chicken Nuggets

Well, it's the first week of RYA.  I hope you've enjoyed it.  Here's the recipes you created today.
Ingredients
Serves: 1
• 1 skinless, boneless chicken breast fillets
• 20g dried breadcrumbs
• 1/4 teaspoon dried herbs
• 10g grated Parmesan cheese
• 1/8th teaspoon salt
• 16g butter, melted
Cook: 20 mins

1. Preheat oven to 200 C / Gas mark 6.

2. Cut chicken breasts into 3 to 4cm size pieces. In a small bowl, mix together the breadcrumbs, dried herbs, cheese and salt. Mix well with your (clean) hands. Put melted butter in a bowl or dish for dipping.

3. Put chicken pieces into the melted butter first and mix with a spoon, then coat with the breadcrumb mixture. Place well-coated chicken pieces on a lightly greased baking tray in a single layer, and bake in the preheated oven for 20 minutes.

I know we didn't get time to do this but have a go at home:
Homemade Tomato Sauce
Put ½ can tomatoes, a pinch of salt, half a teaspoon of sugar and some tomato puree into a pan. Cook for 5 minutes until it reduces then cool. Mash or blend. Adjust seasoning. You can add a little more salt or some herbs or garlic if you wish.

      Could you make these and then freeze them? Would you freeze them before they are cooked or after? And would you have to defrost them before cooking or could you cook from frozen?

  2. Firstly, ensure you have fresh ingredients. For example, if it were chicken that had been frozen and defrosted you couldn't freeze them.
    Secondly, I would freeze them uncooked (bearing in mind the above). They will be too dry when you reheat them otherwise.
    To freeze them, you need to 'open freeze' them. That is, line a baking tray with non stick baking paper. Space the prepared nuggets on it and put into freezer. When they are frozen you have individual nuggets you can put into a bag and remove as required.
    You can cook them from frozen but just ensure they are cooked through (Kyra knows how to do this!). They will take approx 5 mins longer.
    So glad she enjoyed it. She did well and her nuggets looked great!
